Chicken Tikka Masala

Serves 4 40 minutes

Ingredients

4 skinless chicken breast fillets, sliced

30 ml extra virgin olive oil

5 ml crushed garlic

5 ml grated ginger

2 small onions, sliced

2 x 70g Patak's Tikka Masala paste pots

200 ml plain yoghurt

7 ml finely chopped fresh coriander

A squeeze of lemon juice

Method

Heat oil in a pan and fry garlic, ginger and onion until soft (about 8 minutes).

Add tikka curry paste and fry for another minute.

Add chicken and stir fry until cooked (about 5 minutes).

Add yoghurt, coriander and lemon juice and heat through.

Serve with basmati rice, and fresh tomato, spring onion and coriander relish.

Garnish with fresh coriander.
